A local butcher sells elk, mostly in patties. I cooked up a few tonight. Anyone have suggestions about how to season it?

I love elk  very lean and tasty  I just season it with Montreal seasoning and grill it.

Oh oh!! Not sure how this would work with patties, but when I have elk steaks, I marinate them in teriyaki sauce (soysauce/brown sugar/ginger/garlic) and it's AWESOME.  You can even freeze them raw in the marinade, defrost and grill later, and STILL awesome.

I needz me some elk!

goodness gracious ... Lisa - we use a similar marinade on pork roast - use same but add pineapple juice to the mix...

Going to have to check our superWal-fart and see if they have any bison ...
